Steak Quesadilla with Caramelized Onions

Ingredients

1 large onion thinly sliced | 2 tablespoons all-purpose flour |
2 tablespoons olive oil | 1 1/2 oz Hop Barons Steak Seasoning Packet |
8 large flour tortillas | 2 cups milk |
2 cups shredded cheese (cheddar; Monterey Jack, or a Mexican blend) | 2 cups shredded cheese (cheddar or a blend) |
Preparation
1. Season the Steak: Rub the steak with Hop Barons Steak Seasoning, ensuring it's well coated on both sides. Allow it to marinate for at least 30 minutes.
2. Cook the Steak: Grill or pan-sear the steak to your desired level of doneness. Once cooked, let it rest for a few minutes, then slice it thinly against the grain.
3. Caramelize the Onions: In a pan, heat olive oil over medium-low heat.
Add the thinly sliced onions and cook slowly until they become golden brown and caramelized. This might take about 15-20 minutes.
4. Prepare the Cheese Sauce: In a saucepan, melt butter over medium heat. Stir in flour and Hop Barons Steak Seasoning Packet to make a roux. Gradually whisk in milk, stirring constantly until the mixture thickens. Reduce heat to low and stir in shredded cheese until smooth and creamy.
5. Assemble the Quesadillas: On a large tortilla, layer a portion of the sliced steak, caramelized onions, and shredded cheese.
6. Drizzle Hop Barons Cheese Sauce over the filling. Place another tortilla on top.
